Le Dauphin Delice au Chablis

Tasting Notes.

This delightful cow’s milk cheese from the Burgundy region is made for Will using traditional local techniques with a modern twist. The young cheese is regularly washed with Chablis wine before it is packed in a wooden box. The microclimate in the box encourages a thin, wrinkled, aromatic orange rind to form on the surface of the cheese, and is responsible for slowly ripening the delicate creamy centre to a deliciously soft fudgy texture over 3-4 weeks.
