3 Fast and Easy Summer Recipes with Halloumi

WATER MELON SALAD

 

 

SERVES 2

COOKS IN 5 MINS

YOU WILL NEED

1 block of Aphrodite Halloumi (thickly sliced) • Watermelon 2lb/1kg cut into chunks
Bunch of fresh mint
Juice of 1 lemon
1 tablespoon of EV olive oil

HOW TO MAKE

• Heat grill or barbecue to medium-high. Add thickly sliced halloumi to pan or grill, and cook for 1-2 minutes on either side or until golden-brown.

• Layer with skinless slices of watermelon and a few mint leaves on a plate. Finish with lemon juice and oil.

HALLOUMI TACOS

COOKS IN 5 MINS

YOU WILL NEED

Salsa

• 1 mango
• 1/2 red onion, nely diced
• 3 tbsp fresh cilantro/coriander leaves, chopped • 1 mild red chili, deseeded and nely chopped
• 1 tbsp EV olive oil
• Sea salt and freshly ground black pepper

Tacos

• 1 x block Aphrodite Halloumi (sliced)
• 4 mini corn tortillas
• Lettuce and cherry tomatoes, or other salad veg of your choice

HOW TO MAKE

  • Dice and combine the salsa ingredients. Set aside.
  • Slice Aphrodite Halloumi. Heat a non-stick pan to medium heat, add halloumi and cook for approximately 1-2 minutes on either side or until golden brown.
  • Spoon some of the mango salsa onto the warmed or lightly grilled tortilla, layer with lettuce and tomato as desired and top with hot halloumi.

Serve immediately.

HALLOUMI BURGERS

 

SERVES 4
COOKS IN 5 MINS

YOU WILL NEED

• 2 x blocks of Aphrodite Halloumi

(thickly sliced)

• 4 brioche buns

• 2 x medium vine-ripened tomatoes

•  head of iceberg lettuce

• 7 oz/200g mayonnaise

• 3 x canned chipotle peppers in adobo

• 1 fresh lime

• finely chopped bunch cilantro/coriander leaves

 

HOW TO MAKE

• For chipotle-coriander mayonnaise, combine ingredients in a bowl, season to taste and

brush on at least one face of the brioche bun –both faces if you like.

• Layer burger with lettuce and tomato.

• Heat pan or barbecue grill to medium-high. Add thickly sliced halloumi and cook for just 1–2 minutes on either side, or until

golden-brown.

• Add to burger and serve immediately.

 

Serve immediately.
