Studd Sibling Ratatouille with Aphrodite Galotyri
01: Cut all your veggies ½ inch thick. Our trick is to fry each vegetable in 2tbsp batches off individually (do all the zucchini, then eggplant) until golden brown each side and set aside to dry on paper towel.
02: Add 2 tbsp of oil and add cut tomatoes and peppers. Cook until softened.
03: Add smashed garlic and ½ the basil and stir through. Turn off once garlic gas slightly browned.
04: Add tined tomato and full tin of water on medium heat.
05: Simmer and reduce until thickened for around 20 minutes.
Tips: Best eaten the next day cooled.
Serve with a large dollop of Aphrodite galotyri, torn basil or Aphrodite crumbled feta.
